BEEF BONE BROTH RECIPE
2 or more fresh beef joints, preferably from “happy cows”, grass-fed
Roast in oven at 400 for about 30 minutes. remove from oven, place in stock pot and cover with water; simmer for an hour, at least, until you get a nice looking stock. This will not thicken. Let cool and use or freeze right away.
CHICKEN STOCK RECIPE
1 whole raw chicken (remove inside packet if there is one); preferably organically raised
Place in large stock pot and cover with water. Bring water to a quick boil, then simmer at medium to medium-low heat until chicken reaches 165 degrees with meat thermometer (careful not to touch a bone when checking to make sure of an accurate reading!). Remove cooked chicken, place on platter, and take apart as you wish. Let stock cool enough to transfer to containers to use or freeze right away. There should be about 3-4 quarts of good, rich stock. No need to salt stock; you’ll do this when using in a recipe.
